My son would eat an entire batch of this salsa in a day if I would let him. And that's saying something for a boy that doesn't like vegetables. As long as I blend the vegetables so there are no chunks, he loves it. It works for me. I've tried several fresh salsa recipes, but I like THIS ONE the best. It's great because it calls for canned tomatoes so you can make it in the winter if you want. I wanted to use my fresh tomatoes so I substituted three large and one medium tomato for a batch.
