Cooking with ChristyB!

Those that know me are probably wondering why on earth I, of all people, would start a cooking blog.

My original intent was to become more organized by creating a weekly dinner menu for my family as a way to force myself to cook.

In turn, this blog was created as a way to force myself to keep up with my weekly dinner menus so I wouldn't let down my tens of readers by not posting. It's a vicious cycle.

I never claimed to be a very good cook though I do enjoy giving it the 'ol college try. My family says I cook "Cajun" (as in BURNT). I simply don't have the patience to hang around the kitchen while something is cooking and I routinely forget to set the timer which often results in "blackened" dishes.

With the creation of my weekly dinner menus, I have found a new passion for cooking. I don’t dread cooking meals (at least not every night). I by no means create any of the recipes shared on this blog. I simply enjoy researching new recipes and sharing them with my readers along with my main passion, photography, by photographing images of the final product.

I hope you enjoy reading about my cooking adventures. Maybe my dinner menus will encourage you to be more creative with your family’s dinner meals.

Green Bean Bundles

Thanksgiving has come and gone and I failed to post any good Thanksgiving recipes prior to the big day. But, by gosh, I’m going to be ready for Christmas! You know how? By posting what I made for Thanksgiving. :-) First, I made three batches of the Duggar Family Rolls. I shared the recipe here before. There’s nothing better than homemade rolls!

I also made Green Bean Bundles. They look fancy but are deceivingly simple to make. I got this recipe from my BFF, Lori. She and I were never known for our cooking abilities when we were younger. I remember one time…at band camp…just kidding…we decided to make sugar cookies from scratch. We mixed the flour, sugar, eggs, etc. Then we came to this strange ingredient called baking powder. At the age of 13 or so, we had no idea what baking powder was. We put our teenage brains together and decided when all else fails, add milk! Those cookies were the flattest, nastiest cookies ever. I’ll never forget, we served them to Lori’s dad and he ate them with the strangest look on his face, but HE ATE THEM! Luckily for our families, Lori and I have gotten a bit more familiar with the kitchen since then. The proof - her Green Bean Bundles recipe.

Green Bean Bundles
*Recipe from my friend, Lori

Frozen whole green beans
Bacon, cut in half
Onion Powder
Brown Sugar

Sprinkle onion powder on green beans, coat thoroughly. Wrap 6-8 green beans in bacon. Put 1 teaspoon brown sugar on top of each bundle. Bake in a 350 degree oven for 30 minutes, maybe longer if the beans were still frozen. Broil for 5 minutes to crisp bacon. Watch closely. For best results, serve immediately.

If you still have any leftover turkey, you might try using it to make these Crescent Chicken Turkey Squares. That’s what we’ll be having for dinner tonight.
