Those that know me are probably wondering why on earth I, of all people, would start a cooking blog.

My original intent was to become more organized by creating a weekly dinner menu for my family as a way to force myself to cook.

In turn, this blog was created as a way to force myself to keep up with my weekly dinner menus so I wouldn't let down my tens of readers by not posting. It's a vicious cycle.

I never claimed to be a very good cook though I do enjoy giving it the 'ol college try. My family says I cook "Cajun" (as in BURNT). I simply don't have the patience to hang around the kitchen while something is cooking and I routinely forget to set the timer which often results in "blackened" dishes.

With the creation of my weekly dinner menus, I have found a new passion for cooking. I don’t dread cooking meals (at least not every night). I by no means create any of the recipes shared on this blog. I simply enjoy researching new recipes and sharing them with my readers along with my main passion, photography, by photographing images of the final product.

I hope you enjoy reading about my cooking adventures. Maybe my dinner menus will encourage you to be more creative with your family’s dinner meals.

Homemade Dinner Rolls - Duggar Style

Who hasn’t watched the Duggar family on TLC? You know, the family with 18, soon to be 19, kids all with names beginning with J. (Just say, “NO”, Michelle!) Did you know they have a website with some of their favorite recipes? This Labor Day I gave their homemade dinner rolls a try to go along with our brisket and fresh corn on the cob. Yummm-E! These rolls are even better than the 30-Minute Dinner Rolls I tried awhile back. I will definitely be making these babies again. As with everything else I attempt, this homemade bread recipe is sooo simple.

DUGGAR HOMEMADE ROLLS
*Recipe from Duggar Family website

1/2 cup shortening
1/2 cup sugar
1 teaspoon salt
2 packag rapid-rise yeast
2 cups flour

Combine first 5 ingredients in a large bowl & cut with pastry cutter.

2 eggs beat in 2 c. measuring cup, fill cup to 2 cup mark with hot water. Pour over dry mixture.

Slowly add:
3 c. flour

Cover. Let Rise 20 min. in warm oven. Pour onto floured surface. Knead. Flatten with hands into large pizza shape. Cut with pizza cutter into16 slices. Roll up from wide end to point. Place in greased pans leaving space for rolls to double in size. (can shape like crescent or lay on side where swirl shows.) Cover. Let rise in warm oven at least 20 min. Remove from oven. Preheat oven to 375. Bake 20-30 minutes depending on how dark you prefer. Immediately brush with 1 stick (1/2 cup) melted butter. Yields 16 rolls.

To show you that I’m really not that great of a cook, here is my burnt pan of rolls. It wouldn’t be cooking for me if I didn’t ruin something.
