My favorite cool weather “go to” meal is Roast Beef, Potatoes (sorry we leave out the carrots) and a Rhodes Bread Loaf. Start it in the morning and come home in the evening to a warm homecooked meal. This is one of the first meals I could cook successfully when I first got married. Trust me it was this, scrambled eggs and bacon and Mac & Cheese from a box - that’s it.
I recently had a “bad cooking night” where everything I attempted turned out not that great. Bad thing was, it was the night I had my AZO sisters over and they were forced to see what my family deals with on a regular basis. Sorry girls!
With several failures in one night, it was time to go back to the basics and cook what I knew would turn out. So, here you go all you non-cookers out there. This is for you. I guarantee (unless you don’t cook it long enough) you can do this.
Roast Beef & Potatoes with (Almost) Homemade Bread
*No real recipe. This is just what works for me.
1 roast beef, frozen is fine (you select the size depending on the amount you want to feed)
Approx. 4-6 medium Russet potatoes (more or less depending on the amount you want to feed)
Seasoned Salt
Approx. 1/2 - 1 cup beef broth or water (depending on how juicy you want your meat and potatoes)
1 frozen bread dough loaf
In a crockpot, I place a handy Reynolds Slow Cooker Liner so I don’t have to clean the crockpot afterwards. Smart or a lazy, unnecessary expense? I don’t know and I don’t care. I love ‘em!
Wash, peel and slice approx. 4 to 6 russet potatoes. Place them in the bottom of the crockpot.

Place frozen roast into crockpot on top of potatoes. Sprinkle meat with seasoned salt.

Pour 1/2 to 1 cup of beef broth or water into crockpot.

Put the lid on the crockpot and cook for 6-8 hours on low.

Now for the almost homemade bread. Spray a bread loaf pan with cooking spray. I L-O-V-E love my silicone bread loaf pan. The bread just pops right out of it when it’s done.

Place the frozen bread loaf into the greased loaf pan.

Cover with plastic wrap sprayed with cooking spray. Place in warm area to rise (I put it inside my oven with the light on).

After the bread has risen, bake according to the package instructions.
When you get home you will have juicy meat that falls apart when cut with a fork, delicious potaotes and warm almost homemade bread. I doesn’t get much better than that. And, your house will smell wonderful.
